Strawberry Quinoa Muffins


We suggest that you use all organic ingredients when possible.

2.5 cups cooked quinoa

2 flax eggs*

1 cup strawberries, chopped

1 tbsp. vanilla

2 tbsp. pure maple syrup

Pinch of salt

*Flax egg recipe: 1 tbsp. flax meal + 2.5 tbsp. water = 1 egg. Combine and let sit for 5 minutes until thickened.


  1. Preheat oven to 350F.

  2. In a large bowl, combine all ingredients.

  3. Transfer to lightly oiled muffin tins

  4. Bake for 20-25 minutes.
