Episode 5 - Portobello Mushroom Taco's

For your next taco Tuesday, give these a try. They're quick and easy to make and they are delicious.
Portobello Tacos
Portobellos
4 tablespoons orange juice
1 teaspoon cumin
1 tablespoon chili powder
2+ cloves garlic (feel free to add more if you like) ;-)
1/3 cup soy sauce
1/4 cup olive oil
Marinate the mushrooms in mixture for about 30-45 minutes before grilling. The hotter you cook them, the better, so crank up the grill! (Ours was 550 degrees) They will only take 2-3 minutes...
Guajillo Salsa
4 Roma tomatoes
2-3 Jalapeños (seeds removed)
Onion
Guajillo peppers (dried) - soaked for about 45 minutes in water.
Place vegetables in broiling oven for 8 minutes. Then place the vegetables in a blender with a few sprinkles of cumin, kosher salt, lime juice, and absit 1/2 cup freshly chopped cilantro.
Pickled Onions
2 Red onions chopped
Red wine vinegar - full bottle
2 tablespoons honey
2 tablespoons kosher salt
Bring the mixture to a soft boil until honey (or sugar) and salt is dissolved. Place the mixture over the onions and let them sleep for a while.
Corn Tortillas
Place directly on the gas grill or use a cast iron pan with electric stove
